Well, sometimes. Most of the time, you\u2019ll end up with a sandwich or leftover ingredients made in a mushy, boring, usually cold pasta. When you\u2019re being fed like the chef cares, you know you are lucky. Simple food, cooked from scratch, seasoned just right, in a portion that will get you through the day. And potted shrimps with toast to start.<\/em><\/p>\n<div class=\"gallery overflow\"><div class=\"grid\"><div class=\"col-1-1 mob-col-1-1 tiny-col-1-1\"><div class=\"gallery-image gcl-1\"><a class=\"lightbox\" alt=\"unadjustednonraw_thumb_12e0-e1540306170633\" title=\"unadjustednonraw_thumb_12e0-e1540306170633\" href=\"https:\/\/weddingdates.co.uk\/blog\/wp-content\/uploads\/2018\/11\/unadjustednonraw_thumb_12e0-e1540306170633.jpg\" data-imagelightbox=\"f\" data-wpel-link=\"internal\"><img   src=\"https:\/\/weddingdates.co.uk\/blog\/wp-content\/uploads\/2018\/11\/unadjustednonraw_thumb_12e0-e1540306170633.jpg\"><\/a><\/div><\/div><\/div><\/div>\n<p><strong>Most unexpected meal?<\/strong><\/p>\n<p><em>When my girlfriend cooks something \u201chealthy\u201d and it turns out to be very nice. Very unexpected.<\/em><\/p>\n<p><strong>What are the traits necessary to survive and thrive in a kitchen?<\/strong><\/p>\n<p><em>To listen.<\/em><\/p>\n<p><em>To have the state of mind that you get it done despite the circumstances.<\/em><\/p>\n<p><em>The ability to cowboy things to work for you, be it food or an electrical appliance.<\/em><\/p>\n<p><strong>Maximum ingredients \/ does it matter or does it overcomplicate food?<\/strong><\/p>\n<p><em>If you read a recipe for say a slow cooked casserole and it has 1 clove of garlic in it, will you taste it? No. So if you want to taste an ingredient, put enough of it or don\u2019t put it in at all!<\/em><\/p>\n<p><strong>In your experience as a chef, how did the kitchen as an environment change?<\/strong><\/p>\n<p><em>Less cream is used.<\/em><\/p>\n<p><em>Kitchens are less macho. ie \u201cLook how many hours I can work\u201d, \u201cI can pick up this tray from the oven with my bare hands\u201d or \u201cLook how many beers I can drink\u201d.<\/em><\/p>\n<p><em>Kitchens seem to be a lot less aggressive or it could be that I have been lucky where I have worked recently.<\/em><\/p>\n<p><strong>Dream ingredients? \/ Dream food to cook?<\/strong><\/p>\n<p><em>Fresh fish and shellfish.<\/em><\/p>\n<p><em>A loin of tiger stuffed inside an elephant trunk. (he says laughing\u2026)<\/em><\/p>\n<p><strong>What convinced you to stay a chef?<\/strong><\/p>\n<p><em>Books by Anthony Bourdain.<\/em><\/p>\n<p><em>Fear of working in a customer facing role!<\/em><\/p>\n<p><strong>British food culture \/ What is British traditional cuisine?<\/strong><\/p>\n<p><em>British food culture is great as we have food from all over the world.<\/em><\/p>\n<p><em>\u201cTraditional\u201d British cuisine I think shines in the colder months. It\u2019s warming food you want to eat.<\/em><\/p>\n<p><strong>How does\u00a0industrialised\u00a0food translate to flavour?<\/strong><\/p>\n<p><em>An industrialised farm is probably making better tomatoes than you are in your garden, yet your garden tomatoes taste better. I believe the main difference between the two is that the big farms tomatoes have spent two days in a lorry, two days in a warehouse and then two days in your fridge before being eaten. Your garden tomatoes are most likely picked and eaten within hours. The same goes for any vegetable, apart from frozen peas. They are the dudes of the vegetable world!<\/em><\/p>\n<p><em>When it comes to meat, buy the best you can afford. I like raggae but I don\u2019t listen to it all the time.<\/em><\/p>\n<p><strong>Secret recipe or kitchen hack?<\/strong><\/p>\n<p><em>Cling film can be used to make string.<\/em><\/p>\n<p><strong>Life work balance?<\/strong><\/p>\n<p><em>Very important, get a hobby too. A rested chef will always make better food.<\/em><\/p>\n<p><strong>Childhood favourite food? How much of that accounts for what you taste \/ cook?<\/strong><\/p>\n<p><em>Lasagne \/ sweets.<\/em><\/p>\n<p><em>I still love lasagne and sweets.<\/em><\/p>\n<p><strong>Together?<\/strong><\/p>\n<p><em>Not together.<\/em><\/p>\n<p><strong>Comfort food?<\/strong><\/p>\n<p><em>Pappardelle with slow cooked beef ragu made with beef shin, red wine and tomatoes. I\u2019m just a slightly more refined version of the child me.<\/em><\/p>\n<p><strong>Bourdain talks about this. What is demi-glace?\u00a0<\/strong><\/p>\n<p><em>Stock usually veal of beef that has been reduced for many hours until thick and almost syrup like. Very rich and salty and used as a base for sauces or for glazing meat?<\/em><\/p>\n<p><strong>What would you bring back from when you started as a chef?<\/strong><\/p>\n<p><em>The price of ingredients.<\/em><\/p>\n<p><em>My more youthful legs.<\/em><\/p>\n<p><em>Modified boy racer cars.<\/em><\/p>\n<p><strong>What is flavour?<\/strong><\/p>\n<p><em>Sounds like a question for Brian Cox \u2013 probably not the actor thought.<\/em><\/p>\n<p><strong>What are your routines in the kitchen?<\/strong><\/p>\n<p><em>Clean before, clean during and clean after.<\/em><\/p>\n<p><strong>Favourite meat? Favourite vegetable?\u00a0 Ingredient? ( have I asked that question before? I\u2019m sure I did.)<\/strong><\/p>\n<p><em>Meat \u2013 pork closely followed by lamb.<\/em><\/p>\n<p><em>Veg \u2013 courgette.<\/em><\/p>\n<p><em>Ingredient \u2013 onions \u2013 most things start with onions.<\/em><\/p>\n<p><strong>What\u2019s your thinking behind a menu? Do dishes communicate \u2013 like the taste of the starter that lingers in the main?<\/strong><\/p>\n<p><em>Not at all! Does size matter?<\/strong><\/p>\n<p><em>I like the cupboard kitchen. It has treated me well! Less to clean! It keeps me sane. Chopping endless onions is better with some hip hop or techno. And now to sound like a pr*ck.
