Today, <a title=\"Liam\" href=\"https:\/\/www.weddingdates.co.uk\/blog\/summer-salad-with-liam-at-the-castle-at-taunton\/\" data-wpel-link=\"internal\">Liam<\/a> shows us how to make Cold Gazpacho Soup. We love this idea because it&#8217;s a perfect lunch time snack and great for the those summer months! This could be a perfect summer wedding starter, so why not try it out for yourself \u00a0first?<\/p>\n<h2>Cold Gazpacho Soup<\/h2>\n<h2>Ingredients<\/h2>\n<ul>\n<li>1 small or 1\/2 large onion<\/li>\n<li>15 ripe beef tomatoes<\/li>\n<li>1 clove of garlic<\/li>\n<li>6 red peppers<\/li>\n<li>1 cucumber<\/li>\n<li>Sherry vinegar, salt, cayenne pepper and sugar<\/li>\n<\/ul>\n<h2>Method<\/h2>\n<ul>\n<li><span style=\"font-size: 13px; line-height: 19px;\">Chop all ingredients roughly and place together in a bowl.<\/span><\/li>\n<li><span style=\"font-size: 13px; line-height: 19px;\">Blend in a food processor and pass through a fine sieve. Season with salt and pepper and leave overnight.<\/span><\/li>\n<li><span style=\"font-size: 13px; line-height: 19px;\">To finish, season with salt, cayenne pepper and vinegar to taste.<\/span><\/li>\n<li><span style=\"font-size: 13px; line-height: 19px;\">Serve ice cold garnished with sour cream (optional).<\/span><\/li>\n<li><span style=\"font-size: 13px; line-height: 19px;\">All vegetables must be ripe and left for 6 hours to marinate before serving. For our garnish, we stuffed a baby red pepper with ratatouille and dressed with basil pesto and fresh basil leaf.<\/span><\/li>\n<\/ul>\n<h2>Chef\u2019s Tip<\/h2>\n<p>If you\u2019re left with lots of Gazpacho, you can use it with pasta the next day. When heating Gazpacho, it might separate so add some cream or have it with cold pasta &#8211; even better!<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Mmmmmm&#8230;. Sounds just lovely!
