We caught up with Head Chef,\u00a0Gopi Chandran at <a title=\"Kingsway Hall Hotel\" href=\"https:\/\/www.weddingdates.co.uk\/blog\/interview-suzie-kingsway-hall-hotel\/\" data-wpel-link=\"internal\">Kingsway Hall Hotel<\/a> to find out just what goes into planning food for a wedding.<\/p>\n<p><strong>How long have you been working at Kingsway Hall Hotel?<\/strong><\/p>\n<p>I started at Kingsway in April 2012<\/p>\n<p><strong> Have you always wanted to be a chef?<\/strong><\/p>\n<p>Yes from a very young age I was very intrigued by my grandma who used to create sumptuous meals from her farm in my native village. Now I understand what seasonality means.<\/p>\n<p><strong> You are cooking for brides and grooms, their family and friends every day. What do you love to cook for them?<\/strong><\/p>\n<p>My favorite dish from my menu would be:<\/p>\n<p>Starter &#8211; Paupiette of Scottish smoked salmon with pumpernickel bread<br \/>\nMain course &#8211; Braised rump of Welsh lamb, creamy mashed potatoes and a rosemary scented jus,<br \/>\nDesserts- A rich chocolate marquise with cappuccino ice cream<\/p>\n<p><strong> So how many carrots need to be chopped for 200 guests? How do you work out how much food you need (We really want to know!)?<\/strong><\/p>\n<p>100 carrots, 50g per person&#8230;\u00a0We always follow recipes, the recipes are created for 4 persons and we multiply accordingly.<\/p>\n<p><strong>Can you give us some examples of a wedding menu you might find at your hotel?<\/strong><\/p>\n<p>Starters<\/p>\n<ul>\n<li><span style=\"font-size: 13px; line-height: 19px;\">Smoked salmon Paupiette &#8211; Citrus fruits, pumpernickel bread<\/span><\/li>\n<li><span style=\"font-size: 13px; line-height: 19px;\">Pressing of ham hock &amp; duck liver- piccalilli sauce, toasted walnut bread<\/span><\/li>\n<li><span style=\"font-size: 13px; line-height: 19px;\">Goat\u2019s cheese &amp; pear terrine- Beetroot compote, lamb\u2019s lettuce<\/span><\/li>\n<\/ul>\n<p>Main Courses<\/p>\n<ul>\n<li><span style=\"font-size: 13px; line-height: 19px;\">Roast fillet of cod-Pomme forestiere, capers, anchovies<\/span><\/li>\n<li><span style=\"font-size: 13px; line-height: 19px;\">Gressingham duck breast-Sweet potato mash, bok choy, chilli jam<\/span><\/li>\n<li><span style=\"font-size: 13px; line-height: 19px;\">Braised rump of Welsh lamb- Mashed potatoes, spinach, roast shallot, rosemary jus<\/span><\/li>\n<\/ul>\n<p>Desserts<\/p>\n<ul>\n<li><span style=\"font-size: 13px; line-height: 19px;\">Passion fruit mousse-Mango sorbet<\/span><\/li>\n<li><span style=\"font-size: 13px; line-height: 19px;\">Lemon tart -Raspberry sorbet<\/span><\/li>\n<li><span style=\"font-size: 13px; line-height: 19px;\">Chocolate marquise-Cappuccino ice cream<\/span><\/li>\n<\/ul>\n<p><strong>The day of a wedding must be busy and exciting in Kingsway Hall Hotel after months of planning with couples? How do you and your team in the Kitchen prepare?<\/strong><\/p>\n<p>We ensure the wedding breakfast is carefully planned and executed. It is one of the most important days in their lives. I plan one month in advance and do all the purchasing of ingredients 15 days prior.
